Tortilla soup


I just made the acorn squash soup and it is really good. I do have an excellent chicken tortilla soup recipe...I'm going to run downstairs and get it for you.

I'm back. Here it is:
4 cloves garlic
1 medium onion
1/3 cilantro leaves
1 tablespoon plus 2 teaspoons oil
2 teaspoons cumin
1 1/2 teaspoons oregano
1/2 teaspoons pepper
1/2 lb. chicken breast
2 cups chicken broth
1 cup water
1 can diced tomatoes
1 cup tomato juice
2 tablespoons lime juice
1/2 teaspoon Worcestershire sauce
2 teaspoons grated lime zest
4 corn tortillas
1 fresh jalapeno pepper
1/2 cup shredded Montery jack cheese (or pepper jack)

Preheat broiler. Line a broiler pan with foil.

In a food processor (or blender) mince the garlic, add onion and coarsely chop; remove and set aside. In the same processor work bowl, finely chop the cilantro (you can do this by hand too....just chop everything really finely.

In a small boil, combine half the garlic onion mixture, half the cilantro, 1 tablespoon of oil, 1 teaspoon of cumin, 1/2 teaspoon of oregano and 1/4 teaspoon of the black pepper.

Broil the chilcken with the onion-herb mixture on top (or get Elliott to grill it!)Broil 4 inches from the heat for 7 minutes. Turn the chicken over and baste and cook about 7 more minutes. Remove the chicken to a plate..and set the oven temp to 400.

Meanwhile, in a saucepan, warm the remaining 2 teaspoons oil over medium-high heat. Add the remaining garlic-onion mix and stir fry until the onion begins to brown 3-4 minutes.

Add the chicken broth, water stewed tomatoes and their juice, tomato juice, lime juice, Worcestershire sauce, lime zest remaining cilantro, 1 teaspoon cumin, 1 teaspoon oregano and 1/4 teaspoon pepper. Boil and reduce heat to low, cover and simmer while you prepare the remaining ingredients.

Halve the tortilla, then cut crosswise into strips. Place on baking sheet and place in the 400 oven to toast them, about 7 minutes.

Meanwhile seed and mince the jalapeno, then stir it into the simmering soup. Shred the cheese. Shred the chicken. To serve, ladle the soup into bowls. Top with chicken slices, tortilla strips and cheese. Add avacados for a special treat!!
