Peanut sauce for satay or noodles
1 cup chopped onion
2 cloves garlic, minced
2 tablespoons minced fresh ginger root
1/4 cup vegetable oil
1 jalapeno pepper, seeded and minced
1 cup peanut butter
1 1/4 cups coconut milk
1/4 cup tamari (or soy sauce)
3 tablespoons honey
1 Tablespoon curry powder
1/4 cup fresh basil leaves, cut into thin strips
Saute onions, garlic, gingger and pepper. Add everything else(except coconut milk) to pan and stir and dump in the blender...Drizzle coconut milk until the whole think is "smoothyesque."
Really yummy with spagetti noodles and cabbage and lime juice and other raw or stir fried veggies. GReat with grilled meat...chicken, shrimp, beef.

Mmmm, sounds good, I'll try it. I remember that you generally eat homemade salad dressing. How do you put yours together?
Our typical vinegrette is a squirt of good dijon...two teaspoons or so and about 1/4 cup of my personal favorite is red wine vinegar, but you can use lemon juice, or rice wine vinegar or apple cider vinegar too. Then about 1/3 cup olive oil...The vinegar disolves the mustard and then you emmulsify...or stir the oil in really hard to break it up into the vinegar. Add some salt and pepper at the end and stir it up really well...you can always add parm cheese and toasted croutons to the lettuce and make it a good cesear salad too.
